Here is a small assortment of just a few of the incredible varieties of mushrooms that are available during the Summer season. Going clockwise from the top left, first we have the Parasol Mushroom, an expert-level mushroom due to its numerous dangerous look-alikes. Then there are the peachy-brown colored Corrugated Milk Mushrooms, also “not for beginners” because they have gills. The yellow ones are some large Golden Chanterelles that occur during the summer months. And finally, those dark mushrooms are Black Trumpets, Emily’s personal favorite. Black Trumpets are the only ones on this cutting board that we consider “safe for beginners”. They are fully described and explained on the August page of Ryan’s book, Gourmet Mushrooms of the Northeast (no longer available).
