They\u00a0are focused on one thing: finding mushrooms.\u00a0<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>As founding members of the Mushroom Hunting Foundation, Bouchard and Schmidt, of Wakefield, teach people how to safely and responsibly forage for wild mushrooms. It is an ancient skill that immigrants from Europe brought to the United States but one that has since been largely lost.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cOne thing is, the mushrooms can be different in some parts of the world, and some poisonings have happened because of that,\u201d Bouchard said. \u201cAnother thing is, the language of the detailed parts of mushrooms \u2014 it\u2019s complicated enough in English, and for someone to know that in their native language and to know how to translate it into English, things were lost there. One top of that, in the 1900s, it was very un-hip. You didn\u2019t go out in the woods to get\u00a0food.\u201d<\/p>\n<\/div>\n<p><img decoding=\"async\" src=\"https:\/\/bloximages.newyork1.vip.townnews.com\/thewesterlysun.com\/content\/tncms\/assets\/v3\/editorial\/e\/1e\/e1e4b98a-4ddc-51d8-bd10-bcba88deb3de\/5cb74d332fddb.image.jpg?resize=700%2C500\" alt=\"Mushroom Hunters: Wakefield pair is trying to keep ancient skill of mushroom foraging alive through the creation of new foundation\" \/><\/p>\n<div class=\"tnt-ads-container text-center hidden-xs \">\u00a0<\/div>\n<div id=\"tncms-region-article_instory_top\" class=\"tncms-region hidden-print\">\n<div id=\"tncms-block-1728201\" class=\"tncms-block\">\n<div class=\"tnt-ads-container text-center  \">\u00a0<\/div>\n<\/div>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Bouchard has recently written a richly-illustrated book, Gourmet Mushrooms of the Northeast, which also includes a 2019 calendar, because, as with everything in nature, mushrooms have seasons.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cWe want to get the word out that mushrooms have different seasons and mushrooms have not only a certain habitat that you find them in, but it\u2019s going to be a certain time of year that you would look for them,\u201d he said.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Usually in July, the summer mushrooms would be evident, but this year, conditions have not been ideal.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cIt has been dry,\u201d Schmidt said, walking along the path. \u201cAnd the mushroom season has been kind of frustrating.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Despite the lack of rain and the hot sun, Bouchard and Schmidt begin finding mushrooms almost immediately. There\u2019s a small black russula, several little mushrooms called \u201cplums and custard\u201d because of their burgundy and cream coloring, a couple of boletes, one edible and the other bitter, and a nasty-looking puffball with a black interior called a \u201cpoison pigskin,\u201d which, not surprisingly, is not edible.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/bloximages.newyork1.vip.townnews.com\/thewesterlysun.com\/content\/tncms\/assets\/v3\/editorial\/6\/2f\/62f3504a-f6bc-5d2b-8fc1-940ba94b494c\/5cb74d3314ec7.image.jpg?resize=700%2C500\" alt=\"Mushroom Hunters: Wakefield pair is trying to keep ancient skill of mushroom foraging alive through the creation of new foundation\" \/><\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Basic mushroom-hunting equipment includes a collecting basket, brushes to clear away debris from mushrooms and also to clean them when they\u2019re picked, a magnifying glass to help identify different species and knives to cut into mushrooms like the poison pigskin, which is identified by its black interior.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cEvery mushroom hunter should know, especially if you\u2019re going to eat puffball mushrooms, you have to check inside and make sure it\u2019s not the poison-pigskin puffball,\u201d Bouchard said.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Bouchard became interested in mycology, the study of fungi,\u00a0after studying the work of University of Rhode Island botanists like the late Roger D. Goos. Nine years later, he and Schmidt are leading mushroom-foraging workshops and restaurant events and giving talks throughout southern New England.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>One of the most widespread mushroom myths, Schmidt said, is that all mushrooms taste more or less the same.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cA lot of people think that,\u00a0because the mushrooms sold in the supermarket are all the same species,\u201d she said. \u201cThe white buttons, the criminis, the portobellos are all the same mushroom. In the wild, the flavors are so diverse. They can be sweet and almost sugary, they can be sour or bitter or just savory and meaty.\u201d<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>The overriding caveat of mushroom-hunting is never to eat something you can\u2019t positively identify. The motto for safe mushroom-hunting is \u201cwhen in doubt, throw it out,\u201d and a\u00a0field guide is another essential foraging tool.<\/p>\n<\/div>\n<div id=\"tncms-region-article_instory_middle\" class=\"tncms-region hidden-print\">\n<div id=\"tncms-block-1728441\" class=\"tncms-block\">\n<div class=\"s2nPlayer k-q2pcjnDb\" data-type=\"float\" data-stn-player=\"q2pcjnDb\">\n<div id=\"voltax-mp-video\" class=\"shadow-root-voltax-mp\">\n<div class=\"voltax-mp-placeholder contentLeague voltax-mp-placeholder-in-place gallery\" data-is-split-view=\"false\"><img decoding=\"async\" src=\"https:\/\/bloximages.newyork1.vip.townnews.com\/thewesterlysun.com\/content\/tncms\/assets\/v3\/editorial\/c\/04\/c04b9347-58e5-5e9d-933a-81eb96a85e1b\/5cb74d333a8f2.image.jpg?resize=357%2C500\" alt=\"Mushroom Hunters: Wakefield pair is trying to keep ancient skill of mushroom foraging alive through the creation of new foundation\" \/><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cWe recommend getting our book or at least a book,\u201d Bouchard said.\u00a0<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cYou don\u2019t just go out and pick mushrooms and cook them up,\u201d Schmidt added. \u201cYou have to take them home every time and study them with your\u00a0book \u2014 more often, more than one book so you can cross-reference and make sure you get accurate information.\u201d<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cNever take a chance,\u201d Bouchard said. \u201cYou don\u2019t eat a mushroom unless you\u2019re 100 percent sure.\u201d<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/bloximages.newyork1.vip.townnews.com\/thewesterlysun.com\/content\/tncms\/assets\/v3\/editorial\/9\/1e\/91e5cc91-6fb8-513e-8816-581aa64daeb4\/5cb74d33200fc.image.jpg?resize=700%2C500\" alt=\"Mushroom Hunters: Wakefield pair is trying to keep ancient skill of mushroom foraging alive through the creation of new foundation\" \/><\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>Of the hundreds of mushrooms in New England, Schmidt said her most exciting find so far has been a lobster mushroom, which is actually a russula mushroom with an edible mold growing on it. It gets its name\u00a0not from its taste but from the red-orange mold that looks like a cooked lobster.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cRyan calls it \u2018the blue cheese of mushrooms,\u2019\u00a0and I\u2019ve been waiting for years to find that. I think\u00a0it was last year or the year before that, in New Hampshire,\u201d she said.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cIt\u2019s a bright orange mold that covers them,\u201d Bouchard said, \u201cso in a sense it is like blue cheese. This is a good mold that turns it into the delicious lobster mushroom.\u201d<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>When you spend so much time foraging in the woods, you have to contend with several occupational hazards.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cBees. I almost stepped in a bee nest one time,\u201d Schmidt said. \u201cJust falling and hurting yourself when you\u2019re out in the woods. I worry about that.\u201d<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>The biggest concern, however, is tick bites.<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>\u201cI had Lyme [disease],\u201d Bouchard said. \u201cFor some reason, they get me and not Emily.\u201d\u00a0<\/p>\n<\/div>\n<div class=\"subscriber-only\">\n<p>More information on mushroom-hunting classes, and
